Recipe: Coconut Brown Rice

Ingredients:
2 cups brown rice
2 1/2 cups water
1 can coconut milk
1/2 teaspoon salt
2 1/2 cups water
1 can coconut milk
1/2 teaspoon salt
Directions:
- Wash and drain rice.
- Bring water, coconut milk, and salt to a boil.
- Add rice.
- Reduce heat to low and cover.
- Simmer 45 minutes until rice is cooked.
Notes:
- Use leftover rice for creamy and delicious breakfast porridge.
