What were you doing before IIN?
Before attending IIN, I was working in sales and marketing for a handbag company in NYC. I was unhappy at my job and feeling like my work wasn't very meaningful or aligned with my values and interests.
What led you to explore IIN's program?
I wanted to find a career that I was passionate about. I began searching for something else, though had absolutely no idea what that “else” was until I stumbled up the IIN website. I answered a series of questions to see if the program was a good fit. I answered all the questions yes, and immediately picked up the phone and enrolled that day.
What happened since you enrolled in IIN's program?
After enrolling at IIN, I gained the confidence to go after what I want in life. My diet improved and I felt more balanced and energetic. Before graduation, I quit my job and pursued my health counseling practice full time. I worked with clients one on one as well as teaching workshops and cooking classes. This past year I launched a line of all-natural and organic gourmet baking mixes free of refined sugar, dairy, wheat and gluten.
What did you learn at IIN?
I loved learning all the different dietary theories and approaches to health. But IIN is much more then that! It gave me a place to grow and challenge myself in so many ways. I learned to feel the fear and do it anyway, that I can accomplish anything I put my mind to.
What do you love about the school?
I loved the variety of speakers and dietary theories which allow you to think for yourself and figure out what resonates with you most. The support of the community is incredible and so inspiring to hear what other students are accomplishing. Plus, it is amazing to be surrounded by so many like minded individuals. Without the support of the IIN community, I don’t think I would be able to push forward past my limits.
Your studies led you to start a business. What's the name of your business?
Purely Elizabeth, a line of all-natural and organic gourmet baking mixes free of refined sugar, dairy, wheat and gluten.
What do you love about your work?
I’m passionate about helping people eat healthier and live healthier. Doing that through a tangible product is something I thought I would never be able to do, but it is simply amazing. I love being able to set my own work hours, and be my own boss. I can't even call it work hours, because to me I’m not really working, its play!
