Recipe: Protein-Packed Vanilla Avocado Mousse

You don’t have to eat meat to get enough protein. One avocado has 4 grams of protein! Pair it with high protein plant-based foods like leafy greens or chia seeds and you have a protein packed meal. Looking for a clever way to incorporate more avocado in your diet? Try this Avocado Mousse!

- 2 avocados
- 4 c. coconut milk
- 2 tsp. pure vanilla extract
- 2 tsp. raw honey
- Fresh berries of your choice
- Blend half of 1st four ingredients and berries and put aside
- Blend the rest of the ingredients and mix with chia seeds
- Spoon in berry mousse and top with chia mousse
- Top with fresh berries
